Selected as a "Focus Chef 2024"

Chef Nakamura of MOSS okinawa has been selected as one of only seven "Focus Chefs" nationwide for Japan’s largest gourmet event, Diners Club France Restaurant Week 2024. The event aims to make French cuisine more accessible and enjoyable.

He creates a unique world of "Waryu-Yosai", a fusion of French, Okinawan, and Japanese styles. He actively engages with local Okinawan producers, drawing inspiration from their exceptional ingredients and Okinawan food culture to breathe life into each dish.

Additionally, with qualifications as a herbal medicine practitioner, meat sommelier, and Chinese tea advisor, he focuses on sustainability by utilizing all parts of vegetables, such as skins and stems, and creating herbal medicinal soups. His philosophy of "Ishoku-Dogen" — the idea that food and medicine come from the same source — is reflected in his commitment to making meals that not only taste good but also promote health.

『フォーカスシェフ2024』に選出

フランス料理をもっと気軽に楽しむことを目的とした日本最大級のグルメイベント『ダイナースクラブ フランス レストランウィーク2024』にて、MOSS okinawaの中村寿之シェフが、全国で7名のみの「フォーカスシェフ」に選出されました。

シェフ中村が創るのはフランス料理をベースにした「和琉洋才」の世界観。地元沖縄の生産者と積極的に交流をもち、彼らの作る逸食材や沖縄の食文化からインスピレーションを得て皿々へと息を吹き込んでいます。

また、和漢薬膳師・お肉ソムリエ・漢⽅茶アドバイザーなどの資格を活かし、野菜の皮やヘタ、ハーブの茎などをすべて使用した薬膳スープを作るなど、サステナビリティを大切にしつつ、食事をすることでカラダを元気にする「医食同源」を心がけています。
